Gluten Free Peanut Butter Chocolate Chip Cookies

1 cup gluten free flour
1 cup almond meal
1 teaspoon baking powder
1 teaspoon pure vanilla essence
1 tablespoon organic peanut butter
1/2 cup extra virgin coconut oil, melted
1 organic free range egg, lightly beaten
1 serving, 25 grams, Two Islands Peanut Butter Pea Protein Powder
1/2 cup dairy free chocolate chips

  1. Preheat oven 180 degrees

  2. Add all ingredients into a bowl and mix together

  3. Use your hands to bring the mixture together to create a ball of cookie dough, if the mixture is too dry add 1-2 tablespoons of filtered water

  4. Take a small handful of mixture and roll into a ball and place in a lined baking tray

  5. Use a folk and press down to form a cookie shape

  6. Place in the oven and bake for 10-15 minutes until lightly golden
