Cookie Dough Bites

1 cup gluten-free flour
¼ cup coconut sugar
1 serving, 25 grams, Two Islands Vanilla & Coconut Protein Powder
150 grams vegan butter
1 teaspoon vanilla extract
½ cup vegan chocolate chips + ½ cup for melting

  1. In a bowl, stir together the flour, sugar and protein

  2. Soften the butter by heating for 30 seconds, then add to the dry ingredients with the vanilla extract. Stir together until just combine

  3. Add in ½ cup of chocolate chips and stir

  4. With your hands, roll small amounts of the cookie dough bite size balls. Place on a tray and let set in the freezer for 20 minutes until firm

  5. Melt the rest of the chocolate chips, and dip the cookie dough eggs until coated. Place the bites back onto the tray and refrigerate until set. Store in the fridge and enjoy!
