Coconutty Carrot Cake Bars

1 cup oat flour 
4 scoops Two Islands Vanilla and Coconut Pea Protein 
1/3 cup coconut butter 
1/3 cup maple syrup 
1/2 banana 
1/2 cup steamed pumpkin
1/4 cup apple sauce 
1/2 cup grated carrot 
1/3 cup chopped dates 
1/3 cup chopped walnuts 
1 tsp baking powder 
1 tsp apple cider vinegar 
1 tsp cinnamon 
1/2 tsp nutmeg

Combine oat flour, Two Islands Pea Protein, spices and baking powder in a bowl. In a blender, combine banana, pumpkin, apple sauce, apple cider vinegar and maple syrup. Combine the banana pumpkin mixture and the flour mixture together and pour in melted coconut butter. Add in grated carrot, dates and walnuts, mixing together thoroughly. Pour into a baking dish and bake for 30-40 minutes at 180°c. Cool for 20 minutes, drizzle with coconut butter and sprinkle with buckwheat groats!
