1/4 cup Two Islands vanilla and coconut protein
1 cup brazil nuts
1 cup desicated coconut
1 cup freeze dried raspberries
8 tablespoons coconut oil - melted
6 tablespoons maple syrup
1 tablespoon water + more if needed
1/2 teaspoon vanilla essence
1. Combine all ingredients into a food processor and blend together.
2. Mixture will be quite fragile - add more liquid if needed.
3. Using a wet measuring tablespoon scoop mixture into the spoon and pack it in and then gently tap it out to create the shape in the photos - wet the spoon after each use.
4. Place bites onto a lined baking tray and freeze for 15 minutes to set. Once set, store in fridge.
