Coconut Oat Cookies

⅔ cup smooth peanut butter
⅓ cup desiccated coconut
⅓ cup rolled oats
2 small eggs
1 serving (25g) Two Islands Vanilla Pea Protein Powder
1 tsp vanilla essence
¼ cup brown sugar
⅓ cup chocolate chips or cranberries or other optional add ins of your choice

  1. Preheat oven to 180ºC.
  2. Add all ingredients in a medium sized bowl and mix well to combine. Mixture will be thick.
  3. Using a tablespoon, spoon the mixture onto a lined baking tray. Shape roughly into a circle cookie shape.
  4. Bake the cookies in the oven for around 12-15 minutes or until cookies are golden.
