Chickpea Skillet Cookie

This is literally everything you need from a cookie while still being conscious nutrition-focused consumer! It's got a hearty serving of Two Islands Peanut Butter Protein Powder to boost the protein content and a fun (not-so-secret) ingredient. Note to self: Don't consume before a workout!
1 cup chickpeas (drained but save the liquid for the aquafaba)
1 serving (25g) Two Islands Peanut Butter Pea Protein Powder
45g smooth peanut butter
2 tbsp maple syrup
3 tbsp aquafaba
½ tsp baking powder
¼ tsp baking soda
¼ cup choc chips
  1. Preheat oven to 180ºC.
  2. Combine chickpeas, and aquafaba until smooth.
  3. Blend peanut butter, protein powder, maple syrup, baking powder, baking soda and salt until smooth (adding more aquafaba if needed).
  4. Pour mixture into pre-greased skillet.
  5. Bake in oven for 20-25 minutes until edges are golden brown.
  6. Let cool, serve with coconut yoghurt + peanut butter.
