Caramel Apple Pie Cookies

Dry ingredients
½ cup oat flour
¼ cup, 1 serving, 25g, Two Islands Salted Caramel Pea Protein
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Pinch of salt

Wet ingredients
¾ packed cup, 120g, dates, soaked in hot water for 10 min if not already soft
⅓ cup diced red apple, half an apple
2 heaped tablespoons almond butter
1 ½ tablespoons coconut oil, melted

  1. Preheat the oven to 180 C. Combine all of the dry ingredients in a bowl. Blend the dates in a food processor or small blender until broken down into little bits

  2. Add the dates and remaining wet ingredients to the bowl, stirring/folding well until a cohesive dough forms

  3. Scoop out the dough onto a lined baking sheet, shaping/patting the cookies down as they won’t really spread in the oven. You should get about 7 cookies

  4. Bake for 10 - 12 min, until nicely browned underneath. Allow to cool slightly, they are delish while still a little warm!
