Banana Muffins

2 scoops of Two Islands Vanilla & Coconut Pea Protein
2 tbsp chia seeds 
3 free range eggs (Or 1 TBSP flaxseed to make a vegan egg with 2 TBSP water)
3 ripe bananas 
2 tsp cinnamon
1/4 cup rice malt syrup 
2 cups almond meal
1/4 cup coconut oil
1/3 cup coconut flour
Plant milk - add until a good consistency  - not too thick or runny. 

Turn oven on 180 bake

Soak chia seeds in 1/2 cup water for 5 minutes 

Place all ingredients in a food processor or high speed blender

Place in muffin cups and cook for approx 18 minutes (or until a knife comes out clean)
